We are beyond excited to be a part of this restaurant's family! We moved back to Illinois in 2017 with our kids, Avery and Jake. Evan was fortunate to be hired by Jenny and Ed and was able to work alongside them. We are very grateful for the opportunity to continue the excellence that they started in 2011.

Evan graduated from Le Cordon Bleu Culinary School and has 20+ years in the kitchen. He has been the Executive Chef at Rustico Restaurant (VA), Rosa Mexicana (DC) and Perennial on Lockwood (MO). He is very excited to build a relationship with the local farmers and bring the region's best to your table. Gina grew up in Troy, Illinois. She has 15+ years of restaurant management experience from Rustico Restaurant (VA), Port City Brewing Company (VA) and Old Bakery Beer Company (IL).

Jenny Cleveland & Ed Heath - Founders

The resume is only words about the past. We will let our diners write our future together with us. Come in for one of the best dining experiences you will have, in a great environment. Eric Heath and Jennifer Cleveland met at Desert Edge Brewery at The Pub in Salt Lake City, Utah. Eric worked in the kitchen as the Chef and Kitchen Manager, and Jennifer worked in both the kitchen and the dining room. She also worked in the kitchen at The Tin Angel. After a short period of knowing one another, the couple discovered a shared obsession with food, and a mutual desire to eventually have a restaurant of their own. At that point, the two of them set about on the path to make that dream come true. 

The first step was to attend the Culinary Institute of America at Greystone in The Napa Valley, California. While there, Jennifer received “The Culinary Award” for outstanding cooking. Each one graduated with an even greater enthusiasm for the restaurant industry and what they could contribute. During the very intense Culinary program and continuing after graduation, Jennifer and Eric compounded their education by working at places such as Jole, Ad Hoc, Farmstead, and The French Laundry.

The couple is incredibly grateful for having had such amazing teachers and mentors along the way, and will continue the tradition with their own establishment. It is because of these friends, family and mentors they are excited to bring ClevelandHeath Restaurant and Bar to Edwardsville, IL at 106 Main street in the historical Boehm Building. Let’s eat!
